Making quymoq (thin pancakes) and serving
Dough products are made from flour with milk or water, sugar, fat, eggs and other items; quymoq is also a dough product. Beforehand, the flour is sifted, the milk warmed and the eggshells washed in warm water. Curd quymoq (for 1 kg): flour 400 g, milk 1 l, eggs 4, sugar 25 g, salt 8 g, vegetable oil 20 g, curd 300 g. Method: beat eggs, sugar and salt; add half the milk and the flour and make a thin batter; add the rest of the milk and the oil; pour batter with a ladle evenly into a hot oiled pan and cook over medium heat first one side and then the other; stack the cooked quymoqs on a dish; mash the curd and mix in sugar and sour cream for the filling; put filling in the middle and fold into an envelope; before serving brown both sides in the pan, and pour butter or sour cream on top. Jam quymoq uses the same batter, with jam spread on and folded in four, served cold. Hot oil spatters and burns: cooking is done by an adult or the teacher; a child helps only with mixing, folding and decorating.
