Practical: cold vegetable dishes
Cold dishes and snacks are a light kind of food and, being made mostly of fresh vegetables, are rich in vitamins, mineral salts and organic acids. They stimulate appetite and aid digestion. Dishes consisting only of the main ingredient, served with or without a side dish, are called cold snacks. When served, the top is decorated with herbs, lettuce leaves or shapes cut from vegetables. Cold dishes are not heat-treated before serving, so hygiene rules are strictly observed: clean hands and tools, well-washed vegetables, separate boards for raw and cooked food. Serving temperature is 10–12 °C. Vinaigrette contains cooked beetroot, potato, carrot, pickled cucumber and cabbage, green onion and vegetable oil: vegetables are cut in small cubes and the beetroot is added last (so it doesn't dye the rest). Take care with knives and hot water when boiling, peeling and cutting; work as a helper under adult supervision.
