Explanation

Sumalak is a tasty spring dish. It is cooked all night from sprouted wheat and flour. People take turns stirring the cauldron and singing songs. The textbook has a funny fairy tale about sumalak. Halim and green-herb samsa are also cooked in spring.

Worked examples
“Sumalak night”. Before Navruz, sumalak was cooked in our neighbourhood. The juice of wheat sprouts and flour were put into a big cauldron. The women took turns stirring the sumalak all night. We children sang songs to cheer them on. In the morning everyone tasted the sweet sumalak.
